Egg on My Face

No picture today ! There’s a reason. There should have been photo and recipe.

I was looking forward to making and eating today’s tomato temptation. Large, hollowed-out tomatoes, filled with a mix of breadcrumbs, chopped parsley, and chopped up tomato flesh, onto which was broken an egg - followed by a breadcrumb and grated parmesan mix topping. Put into the oven for 30 minutes and out would come a delicious baked egg and tomato ensemble.

Only it didn’t quite work out like that. I ran into problems at the filling stage. Too much filling left just about enough room for an egg – but no breadcrumb and parmesan topping – so instead I stuffed other tomatoes with just the parsley, breadcrumb and chopped tomato mix, topping  them off with breadcrumbs and parmesan.

It would seem egg yolks don’t take kindly to being left unprotected at 180c for 30 minutes. A stranger set of egg yolks I ‘ve ever to see. Which was a shame – cos actually somewhere in the wreckage of the dish was something quite nice – nice enough to pick round the edges of and taste potential.

But if you are first meant to eat with your eyes – then this was indigestion at first glance ! So apologies for the lack of kitchen tomato today – but consider yourselves spared !
