Last week’s sandwich was too much for some.
‘Egg and Tomato – fine. Mushroom and Tomato – fine. Egg , Mushroom and Tomato – too much.’
So this weeks it’s back to basics . Fried Tomatoes on Rustic Toast.
Fried tomatoes don’t have to be green.
Thickly slice a few RED ones (be sure to nick a little V in the slice with the dimple bit in it to remove ).
Fry in olive oil until soft. And then because these parer downers like to add ingredients but just not so that you would see them - add a few drops of Worcestershire Sauce or Tabasco to the tomatoes as they are cooking.
Scoop the tomatoes out of the pan onto toasted ciabatta and be sure to tip the frying pan long enough for the last of the juices to drip through the little dough caves of the ciabatta.
A fine and simple tomato treat.
