Roast Toms The potato has headlined as the bill topping roasted vegetable for too long !

Yesterdays’  tomatoes were slow roasted. Today I cranked up the heat to 200c and put them in for 45 minutes.  Treated the same way; salt, pepper, sugar, oil.  Good flavour, slightly looser texture than slow roasted.  These might actually hang round long enough to make it into a pasta or coucous dish .

As the oven was on I  threw in some other vegetables. White , yellow, red beetroot . Yellow and green Courgettes.  The beetroot was amazing.

So to conclude my roasting rhapsody – it’s not just the salad bowl that makes summer veg sing,  a hot oven conducts a sizzler of a symphony too.
