Listening to Nigel Slater talk about food is like listening to poetry lilting from an inspirational pulpit.
In this video, talking about new book Tender, he shares a few ideas on tomatoes.
The tomatoes baked with goats’ cheese and served with crusty bread sounded delicious (I can only think timing constraints caused the edit of the words and a glass of rustic French Red ).
So I made them using the plain version of my favourite goat’s cheese Rosary Ash.
The video isn’t long on detail so a bit of guesswork was required.
To make room to tuck in the cheese , I scooped out and chopped up the tomato insides, put it back and pushed the cheese in on top.
I baked one tomato with the top on and one with the top off. Top off worked better.
I cooked for 40 minutes at 180C; too long as they turned a bit mushy. I was trying to get the cheese to go golden.
I wonder how it would work if you baked for shorter and then gave it a little blast under the grill ? Or maybe I should have used a slightly firmer goat cheese ?

Mind you he makes everything look both easy and beautiful…..
Where as I……..the photo is of the top off tomato. Top on was very edible but even less photogenic !
