There was ever only one way for those mixed tomatoes to go. Tomato salad.
I followed the “Mothership” recipe from Jamie at Home, ( I know, I know – a recipe for a salad/silly name to boot – but his tomato love shines through so keenly!) preparing the tomatoes three ways - slice, quarter and chunk before salting and leaving in a colander for 15 minutes.
Dressing, a scattering of finely chopped red chilli and dried herbs and it was ready. I had mozzarella and basil waiting in the wings … but decided the tomatoes could carry the stage alone.
(As it transpired, the Italian contingent were clearly holding on for much greater opportunities – who wouldn’t give up salad for Semis inclusion?)
