There’s an aspect of bringing in a tomato crop I’ve become increasingly shifty about…..Soup.
I don’t know if it’s prompted by autumnal nips but thoughts seem to be turning to soup and I’m being asked if I’ve made any. Answer – no. This seems to be the wrong answer.
So I decided today was the day to put that right (despite as it turned out it being a sunnies and air con in the car, kind of day).
But I don’t think I’ve cracked the secret of soup making.
I fried some onion in butter, added small chunks of peeled potato, added lots of peeled Roma tomatoes, topped it all up with vegetable stock and simmered. When the potato was soft I whizzed it all in the blender and served with basil .
The flavour was fine but the texture more puree than soup.
Roma for improvement !
